Among our high end Gesha and beautiful natural offering (Don Gerson) from Guatemala, you’ll find this tasty washed lot. Aka, Lote Selectivo CIACAFE. This is the product of a wonderful collaboration between our friends at Collaborative Origins and CIACAFE, a young but up-and-coming coffee cooperative. After some experimenting with fermentation styles and time lengths, together, they decided this lot was the winner. The cooperative produced a microlot with the selected cherries, drying, and processing methods that had produced the best sample. Here we have, (drumroll), Lote Selectivo.
